Baking with Big Machine – Lemon Vodka Pancakes

There’s nothing better than hot and zesty pancakes on a Saturday morning! This is the perfect recipe not just for pancake and lemon lovers, but for vodka lovers as well. Grab your Big Machine Vodka and get ready to bake!

Pancake Ingredients:

·      2 cups Bisquick pancake mix

·      1 cup milk

·      2 eggs

·      1.5oz Big Machine Vodka

·      2 tbsp Lemon Juice

Instructions:

·      Preheat non-stick skillet to medium heat.

·      Add all ingredients to bowl and mix until batter is smooth and lump free.

·      Pour ¼ cup batter into a measuring cup and wait for your skillet to heat.

·      Once completely heated to medium, turn down heat to medium low.

·      Give skillet 2 minutes and lightly grease with butter.

·      Pour your boozy batter and get to flipping!

Lemon Cream Ingredients:

·      1 cup cream cheese softened

·      Juice of ½ lemon

·      Zest of ½ lemon

·      3 tbsp powdered sugar

·      1.5oz Big Machine Vodka

Instructions:

·      Add Big Machine Vodka, cream cheese, lemon juice and powdered sugar to bowl and mix together.

·      Sprinkle in lemon zest to taste, leave some for garnish.

·      Once mixed, spread all over your boozy pancakes and enjoy!
